Cafecito Friend and Guest Chef:

Francisco "Pancho" Rocha

Private chef and instructor Francisco Rocha is currently working in Santa Fe, NM, having previously worked in Dallas, TX, Fayetteville AR, Washington DC, and Buenos Aires Argentina. Francisco specializes in catering private events with groups of no more than eight people to provide a personalized service, resulting in a warm and intimate atmosphere. He has also collaborated in more significant events with other prominent chefs in Dallas and now in Santa Fe.

Francisco Rocha has been cooking since he was 12 years old when, influenced by a TV show by Francis Mallmann, he made his first 4-step dinner for his parent's friends. Since that day, he has never stopped cooking. As time passed, he let other chefs into his life, such as El Gatos Dumas, Mark Miller, Jeremiah Tower, Stephen Pyles, Martitegui, Jose Andres, and Colagreco among others, who inspired him with classic and advanced culinary techniques.

Francisco has a style that unites the two worlds, the classic of the native gastronomy of Argentina with the grill, the wood-fired clay oven, and the smoker he learned as a child in his country house in Quilmes, Buenos Aires, with his grandfather and father. And the latest and most modern cooking systems such as Sous vide, elaboration of textures such as crisps and foams in which he is constantly learning. The goal is always to respect the products, tradition, and history of Argentine cuisine.
